Misal Pav

Misal Pav is a spicy and flavorful Maharashtrian dish that is made with sprouted beans and served with Pav (bread rolls). Here's a simple recipe for Misal Pav.

Ingredients

  • 1 cup sprouted matki (moth beans)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chillies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1/2 tsp turmeric powder
  • 2 tbsp oil
  • Salt to taste
  • Farsan (fried snacks like sev or chiwda)
  • Coriander leaves for garnish
  • Pav buns

Instructions

  1. Heat oil in a pan and add cumin seeds and mustard seeds. When they start spluttering, add chopped onion and green chillies. Fry until onion turns translucent.
  2. Add ginger-garlic paste and fry for another minute.
  3. Add chopped tomatoes and cook until they turn soft and mushy.
  4. Add coriander powder, garam masala powder, turmeric powder, and salt to taste. Mix well.
  5. Add sprouted matki and mix again.
  6. Add enough water to cover the matki and bring it to a boil. Lower the heat and let it simmer until the matki is cooked and the curry thickens.
  7. Once the curry is ready, serve it hot in a bowl, topped with farsan, chopped onions, and coriander leaves.
  8. Serve it with pav buns on the side.
