Misal Pav
Misal Pav is a spicy and flavorful Maharashtrian dish that is made with sprouted beans and served with Pav (bread rolls). Here's a simple recipe for Misal Pav.
Ingredients
- 1 cup sprouted matki (moth beans)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2-3 green chillies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1/2 tsp turmeric powder
- 2 tbsp oil
- Salt to taste
- Farsan (fried snacks like sev or chiwda)
- Coriander leaves for garnish
- Pav buns
Instructions
- Heat oil in a pan and add cumin seeds and mustard seeds. When they start spluttering, add chopped onion and green chillies. Fry until onion turns translucent.
- Add ginger-garlic paste and fry for another minute.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add coriander powder, garam masala powder, turmeric powder, and salt to taste. Mix well.
- Add sprouted matki and mix again.
- Add enough water to cover the matki and bring it to a boil. Lower the heat and let it simmer until the matki is cooked and the curry thickens.
- Once the curry is ready, serve it hot in a bowl, topped with farsan, chopped onions, and coriander leaves.
- Serve it with pav buns on the side.
