Pav Bhaji

Pav bhaji is a popular street food dish from Mumbai, India. It consists of a spicy vegetable curry (bhaji) that is typically made with mashed potatoes, tomatoes, peas, onions, and a blend of spices such as cumin, coriander, turmeric, and red chili powder. The bhaji is then served with lightly toasted bread rolls (pav) that have been brushed with butter or oil.

Ingredients


  • 2 large potatoes, peeled and chopped
  • 1 large onion, chopped
  • 2 medium tomatoes, chopped
  • 1 large capsicum, chopped
  • 1 cup frozen green peas
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • 2 teaspoons garam masala
  • 2 tablespoons oil
  • Salt, to taste
  • 2 tablespoons butter
  • 1 lemon, cut into wedges
  • 8 pav buns   

Instructions

  1. Heat the oil in a large heavy-bottomed pan over medium heat.
  2. Add the onions and cook until they turn golden brown.
  3. Add the ginger-garlic paste and cook for a minute.
  4. Add the chopped tomatoes and cook until they are soft and mushy.
  5. Add the chopped capsicum and cook for 2-3 minutes.
  6. Add the chopped potatoes, green peas, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
  7. Add 2 cups of water, cover the pan, and let the vegetables cook until they are soft and tender.
  8. Mash the cooked vegetables using a potato masher or an immersion blender until they are smooth and well combined.
  9. Add the butter and mix well.
  10. Toast the pav buns on a griddle or in a pan with a little butter until they are golden brown and crisp.
  11. Serve the pav bhaji hot with the toasted pav buns and lemon wedges on the side.
