Dahi Vada
Dahi Vada is a popular Indian snack made from lentil dumplings soaked in seasoned yogurt (curd) and topped with various chutneys and spices. It's a delicious and refreshing dish, perfect for hot summer days. Here's a simple recipe to make Dahi Vada at home.
Ingredients
For the Vadas:
- 1 cup urad dal (white lentils)
- 1-2 green chilies, chopped (adjust to your spice preference)
- 1-inch piece of ginger, grated
- A pinch of asafoetida (hing)
- Salt to taste
- Oil for deep frying
For the Yogurt Mix:
- 2 cups thick yogurt (curd)
- 1/2 cup water
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon red chili powder
- Salt to taste
For the Toppings:
- Tamarind chutney (Imli chutney)
- Green chutney (Coriander-mint chutney)
- Roasted cumin powder
- Red chili powder
- Chopped coriander leaves
- Sev (crispy chickpea flour noodles)
Instructions
- Soak the urad dal in water for about 4-5 hours or overnight. Drain the water and grind the dal to a smooth paste using very little water if necessary.
- Add chopped green chilies, grated ginger, asafoetida, and salt to the dal batter. Mix well.
- Heat oil in a deep frying pan or kadhai over medium heat. Wet your hands, take a small portion of the batter, and drop it gently into the hot oil. Fry the vadas in batches until they turn golden brown and crispy. Make sure to fry them evenly on all sides. Once done, remove the vadas from the oil and drain them on paper towels to remove excess oil.
- In a bowl, whisk the yogurt until it becomes smooth. Add water, roasted cumin powder, red chili powder, and salt. Mix well to make the yogurt mixture.
- Soak the fried vadas in warm water for about 15-20 minutes. Then gently squeeze out the excess water by pressing the vadas between your palms.
- Place the squeezed vadas in the yogurt mixture and let them soak for at least 30 minutes to an hour, allowing them to absorb the flavors.
- To serve, arrange the soaked vadas on a serving plate. Drizzle some tamarind chutney and green chutney over them.
- Sprinkle roasted cumin powder, red chili powder, and chopped coriander leaves on top.
- Finally, garnish with some sev to add extra crunch and flavor.
